BEET SALAD 
1 can sliced beets
1/2 c. vinegar
1/4 c. reserved beet liquid
2 tbsp. sugar
1 1/2 tsp. salt
1/2 tsp. ground pepper

Put beets into a bowl and add mixture of vinegar, beet liquid, sugar, salt and pepper. Toss beets lightly into this salad marinade. Cover bowl and place in refrigerator to chill. 1-2 tablespoons horseradish can be added to marinade.
