CHICKEN LASAGNA 
8 oz. (9 pieces) lasagna noodles
1 c. (9 oz. pkg.) frozen chopped spinach (optional)
3 c. cooked chicken or turkey, cut in sm. pieces
2 c. shredded Mozzarella cheese
1 (10 3/4 oz.) can cream of mushroom soup
1 c. sour cream
1/3 c. onion (optional)
1/2 c. (4 oz.) can mushrooms, drained
Salt, pepper
1/2 c. Parmesan cheese

Cook lasagna noodles - drain well. Cook spinach - drain. Mix chicken, 1 1/2 cups cheese, soup, spinach (optional), sour cream, mushrooms, onion, salt and pepper. Mix well.

Grease 9 x 13 inch pan - 3 noodles on bottom, spread 1/2 of chicken mixture, another layer of noodles, repeat chicken mixture, then noodles again. Sprinkle with cheese. Bake at 350 degrees for 30 minutes (or until brown).
