STACY'S SPICY CHICKEN LASAGNA 
1 whole chicken, boiled and deboned
1/2 cup chopped onion
1/2 cup chopped bell pepper
garlic, to taste
rosemary, to taste
salt and pepper, to taste
1 pkg. lasagna noodles
1 (8 oz.) can tomato sauce
1 (10 oz.) can Rotel
small container ricotta cheese
small container cottage cheese
8 oz. shredded mozzarella cheese

Sauté chicken with the seasonings in butter. Use the chicken broth from the boiled chicken to cook the noodles.

Mix chicken with tomato sauce and Rotel. Mix ricotta and cottage cheese together.

In layers: 1st noodles, 2nd cheese mixture, 3rd meat mixture. Top with mozzarella cheese.

Bake at 350°F until bubbly.

Note: If you use low fat or fat free ingredients for this recipe, it makes an excellent low fat lasagna that tastes great!
