PORT WINE SALAD | |
1/2 c. pear juice 2 pkg. cherry Jello 2 1/2 c. boiling water 1 c. port wine 12 pear halves Prepare cherry Jello with pear juice and boiling water. Let cool 5-10 minutes. Add wine and pear halves. Serve with Golden Dressing. An easy salad to prepare and pretty in a ring mold or in attractive individual molds. GOLDEN DRESSING: 1 egg 1/4 c. sugar 1/2 tbsp. flour 1/2 c. whipped cream or Cool Whip 1 tbsp. lemon juice 1/8 c. orange juice 3/4 c. pear or pineapple juice Grated orange rind Beat egg and sugar, flour, fruit juices, and rind. Stir until smooth. Cook in double boiler until it is of custard consistency. When cool, fold in whipped cream (or Cool Whip) before serving. This is the best dressing I have ever tasted for fruit salads and for gelatin salads containing fruit. It keeps surprisingly well if kept chilled and may easily be made a day before serving. |
