SPINACH ROCKEFELLER | |
1 cooked pkg. frozen chopped spinach, drained 5 tbsp. melted butter 1/4 c. minced onion 2/3 c. bread crumbs 2 whole eggs 1/4 c. grated Parmesan cheese 1 tsp. minced garlic 1/4 tsp. thyme 1/2 tsp. pepper 1/4 tsp. cayenne (optional) Salt and pepper Saute onion in melted butter. Mix ingredients and arrange 2 drained cans of tomato wedges on buttered 13x9 dish. Top tomatoes with mounds of spinach mixture. Bake at 350 degrees for 15 minutes in 13x9 pan. |
