POMMES AU FOUR AUDY 
4 baking apples, peeled & cored, coated with a little lemon juice & sugar
4 tsp. red current jelly
1 c. cream
2 egg yolks
3 tbsp. granulated sugar

Butter an oven-proof dish. Set apples in dish. Butter the apples a little. Set dish in oven at high temperature and cook until soft. Make a liasion with egg yolks, sugar and cream. Pour into dish and continue cooking in a low oven until it is set (5-10 minutes). Remove from oven, decorate with jelly. Serve warm.
