CHOCOLATE MOUSSE 
6 sq. semi-sweet chocolate
1/4 c. light cream
1 tsp. vanilla
Dash of salt
4 egg yolks, slightly beaten
4 egg whites
1/4 c. sugar

1. Melt chocolate over low heat.

2. Remove and blend in cream, vanilla and salt.

3. Gradually add yolks and beat with whisk until creamy and thick. Put aside.

4. Beat whites until foamy. Beat in sugar until peaked.

5. Fold into chocolate mixture.

6. Top with whip cream.
