1 Pyrex or oblong glass pan 500 gram container mascarponi cheese (imported, not domestic) 1 lg. pkg. lady finger cookies 1/2 pt. heavy cream 5 eggs 6 (American) c. black espresso coffee 1/2 c. sugar 4 - 5 tbsp. brandy or cognac 1/2 tsp. cocoa (scratched chocolate or curls optional) Beat in bowl on light speed Mascarponi and liquor with sugar, then add 5 beaten egg yolks. In separate bowl beat egg whites stiff. In separate bowl beat heavy cream (don't over beat). Then fold egg whites into mascarponi bowl and then the heavy beaten cream. Take the savoirdi cookies and dip each side lightly into the espresso coffee. Lay side by side in the glass pan. Add half of mixture on top of cookies. Add scratched chocolate. Repeat with cookies for second layer. Sprinkle cocoa on top layer with chocolate curls. Refrigerate at least one day before eating. Mascarponi cheese and savoirdi cookies can only be found at an Italian deli. This is a make - ahead dessert. It needs long chilling to mellow to perfection. A gift for that special company. |
