IRISH SCONES | |
2 c. flour 1/2 c. sugar 2 tsp. cream of tartar 1/2 tsp. salt 1 tsp. baking soda 1/2 c. Crisco or butter 2 eggs 1/4 c. milk 1/2 c. currants Mix dry ingredients. Cut in Crisco until mix resembles cornmeal. Add eggs, milk and currants, just mixing until blended. Turn out on floured board and knead a minute or two until you can roll it out. Roll out 1/2 inch thick and cut in squares with knife or circles with cookie cutter (2 inches) and put on greased, floured cookie sheet. Bake at 400 degrees about 15 minutes (check at 10). They should be just lightly golden color. Delicious plain or buttered. |
