IRISH SCONES 
2 c. flour
1/4 tsp. baking soda
1 tbsp. sugar
1 c. buttermilk (approximately)
1 egg
2 tbsp. butter

For 12 scones, sift flour, salt and baking soda into a large bowl. Cut in butter and rub in until like crumbs. Add sugar and enough milk to make a soft dough together with beaten egg. Turn on to a floured board, lightly knead a few times, roll out and cut into rounds about 2 inches in diameter (use the top of a glass upside down). Bake at 400 degrees approximately 15 minutes or until nicely browned.

Sultana Scones: Add 1-2 tablespoons sultanas.
