FILLED CUCUMBER BOATS 
Cucumbers
Chopped olives
Chives
Chopped pimento
Chopped celery
Salad dressing
Lettuce leaves

Cut long tender cucumbers in half lengthwise. Scoop out seeds and part of pulp. Mix with chopped olives, chives, pimento and celery. Toss with salad dressing and fill cucumbers. Serve on bed of lettuce or romaine leaves.
