ENCHILADA CASSEROLE | |
1 boneless chicken breast 1 red pepper 1 green pepper 1 lg. onion 1 can green chilies Tortilla chips 1/2 lb. Monterey Jack cheese 1 can cream of chicken soup 1 sm. jar salsa 1 tbsp. olive oil Saute in olive oil green pepper, red pepper, onion, chilies and finely chopped chicken breast until chicken is done. Butter casserole dish, cover bottom with tortilla chips. Add undiluted soup and salsa to sauteed mixture. Pour over tortilla chips. Grate cheese over top. Bake at 350 degrees for 25 minutes. |
