PUMPKIN CAKE | |
4 eggs 1 c. cooking oil 2 c. all-purpose flour 2 tsp. cinnamon 1 tsp. baking soda 1 2/3 c. sugar 1 (16 oz.) can pumpkin 2 tsp. baking powder 1 tsp. salt Beat eggs, sugar, oil and pumpkin until light and fluffy. Then in another bowl, combine all dry ingredients. Add pumpkin mixture; mix thoroughly. Put into ungreased 15 x 9 x 1-inch pan (or spray with Pam, if desired). Bake 30 minutes at 350°F. Cool and frost. Frosting: 8 oz. cream cheese, softened 1/2 c. butter, softened 1 tsp. vanilla 2 c. sifted powdered sugar Cream the butter and cream cheese; stir in vanilla and add powdered sugar, a little at a time. |
