CHINESE VEGETABLE SALAD 
2 qts. torn salad greens
1/2 c. Chinese parsley, minced
1 (8 oz.) water chestnuts, sliced
Vegetable oil for deep-frying
20 pieces won ton wrappers
1 pkg. long rice
1/4 lb. julienned char siu
2 tbsp. toasted sesame seeds

Put vegetables and water chestnuts in a large bowl and chill. Heat oil to 375 degrees; slice won ton wrappers into 1/2 inch strips and deep-fry until golden brown. Divide long rice into 4 parts, then deep-fry each part separately until light and fluffy. Drain and break into smaller pieces. Just before serving add won ton, long rice, char siu and sesame seeds. Toss gently. Serve with Hoisin-sesame Dressing.

HOISIN-SESAME DRESSING INGREDIENTS:

2 tbsp. Hoisin sauce
1/3 c. sesame oil
1/4 c. catsup
2 tbsp. vinegar
1/4 c. sugar
1 tsp. salt

Combine all ingredients and mix well.
