LAMB SHISK-KABOBS 
2 lb. lamb, cut in 1 1/2 inch cubes
2 slices onions
1/2 c. olive oil
1/2 c. wine vinegar
1/2 c. red wine
Juice of 1 lemon
1/2 tsp. pepper
2 cloves garlic, chopped
1 tsp. oregano
12 cherry tomatoes
1 green pepper, cut in 6 pieces
6 sm. onions
6 lg. mushrooms

Marinate lamb in large bowl with sliced onions, oil, vinegar, wine, lemon juice, and seasonings. Cover and refrigerate for a few hours or overnight.

Thread lamb on skewers alternating with tomatoes, onions, pepper, and mushrooms. Grill 10-12 minutes or until brown, basting with marinade.
