FUDGE 
4 c. sugar
25 marshmallows
1 1/3 c. canned milk (Pet, Carnation, etc.)
2 cubes (1 c.) butter, room temperature
12 oz. chocolate chips
2 tbsp. vanilla
1 c. nuts

Combine sugar, marshmallows, and milk in large (Dutch oven) heavy saucepan. Cook over medium heat, stirring constantly until it bubbles. Cook exactly six minutes from then. (NOTE: Stop stirring to determine if mixture is bubbling prior to beginning the six-minute cycle - otherwise it may be undercooked and it will not set up).

Stir frequently during the six-minute cycle. Remove from heat and add butter, chocolate chips, and vanilla. Beat candy until butter and chocolate chips are melted and are thoroughly blended. Add chopped nuts and pour into a buttered 9 x 13 inch pan. Cut into squares when cool. Makes about four pounds of fudge.
