SWEET ZUCCHINI BREAD 
3 eggs
1 c. oil
1 3/4 c. sugar
2 tsp. vanilla
2 c. zucchini, peeled and grated
1 tsp. salt
1 tsp. baking soda
3 1/2 tsp. cinnamon
1/4 tsp. baking powder
1/2 c. chopped nuts
3 c. all-purpose flour

Beat eggs. Add oil, sugar and vanilla; mix well. Stir in zucchini.

Sift dry ingredients together. Add to egg mixture. Blend well. Fold in nuts.

Pour into 2 greased loaf pans. Bake 50-60 minutes at 350 degrees. Freezes well.
