SOUTHERN SPOON BREAD | |
1 c. cornmeal 2 c. cold water 2 tsp. salt 1 c. milk 2 or 3 eggs 2 tbsp. butter, melted Mix cornmeal, water and salt in pan and boil for 5 minutes. Stir while boiling. Add milk and well-beaten eggs. Stir in melted butter. Mix well over low heat. Pour into a well-greased, hot baking dish (should fill the dish 2/3 full). Bake for 50 minutes at 375 degrees until top begins to brown. Serve hot from pan and top with butter. |
