HOLIDAY FRUIT CAKE | |
2 eggs 1/2 c. water 2 pkgs. Pillsbury quick bread mix (I prefer date) 2 2/3 c. (28 oz.) mincemeat with rum and brandy 2 c. chopped nuts 2 c. candied fruit Grease tube pan generously and flour. In a large mixing bowl, combine eggs and water; beat well. Add remaining ingredients by hand; stir until well mixed. Pour into prepared pan. Preheat oven to 350 degrees. Bake 80 or 90 minutes or until tester comes out clean. Cool 15 minutes in pan. Invert on cooling rack. Will freeze well. |
