EGG RICE 
4 scrambled eggs
1 1/2 c. cooked rice
1/4 c. chopped celery
1/4 c. bell pepper
1/4 c. chopped onions
Salt & Pepper to taste

Saute celery, bell pepper and chopped onions until tender. Scramble eggs in butter, add cooked rice and steam for 10 minutes. Serve with toasted bread or hot rolls. Can add smoke sausage if desired.
