HAM AND SWEET POTATO CASSEROLE 
1 1/2 c. ham, cooked and diced
6 c. sweet potatoes, cooked
2 eggs, beaten
1/2 c. milk
1 1/2 tbsp. lemon juice
1/2 tsp. salt (or to taste)

Brown ham slightly in tablespoon butter or ham fat. Whip potatoes until smooth and combine with beaten eggs, milk, lemon juice and salt; turn into a buttered casserole. Bake in a moderate oven (350 degrees) for 45 minutes. Serve hot! 5 servings.
