HAM & POTATO CASSEROLE 
1 1/2 c. cubed ham
1/2 med. onion, chopped fine
1 1/2 tbsp. chopped green pepper
1 1/4 tbsp. flour
2 tbsp. butter
1 c. milk
Salt & pepper
1 1/2 c. cubed potatoes
1/2 c. shredded cheese

Saute onion and pepper for 5 minutes. Add flour and milk; stir and cook until thickened. Season. Add potatoes and ham; pour into 1 1/2 quart casserole. Top with cheese. Bake at 350 degrees for 25 to 30 minutes.
