Boil 5 potatoes in jackets until done. Chop 1 onion and 1 bell pepper. Brown 4 strips of bacon and cut in small pieces.

Peel potatoes and cut in small pieces. Add onion and bell pepper, 4 tablespoons of salad cubes and pour bacon and grease over potatoes.

POTATO SALAD SAUCE:

3 tbsp. mayonnaise
1 tbsp. mustard
1 tbsp. vinegar
1 tbsp. sugar
1 hard-boiled egg (optional)
Salt and pepper to taste

Combine in a separate bowl. Pour over potato salad and toss.
