PEACHY ORANGE JAM | |
3 lg. juicy oranges 6 c. Domino granulated sugar 1 lemon 3 lb. (about 12) med. firm peaches Grate rinds of oranges and lemon. Squeeze the juices and remove seed. Do not strain. Combine rinds and juices in a large heavy kettle. Peel and chop peaches into citrus juices. Stir in sugar and bring to boil over medium heat, stirring often. Reduce heat and let simmer slowly until thickened, about 35 to 45 minutes. Stir frequently, do not cover. Pour into hot sterilized jars and seal at once. Yield: 5 half pints. |
