PIMENTO LEMON PICKLES | |
4 lg. lemons 1/2 tsp. salt 1 c. sugar 1/2 c. cider vinegar 1 sm. piece stick cinnamon 1 sm. piece ginger root Few whole allspices Few whole cloves 1 (7 oz.) jar pimentos Thinly slice the lemons and sprinkle with salt; set aside. Tie the spices in a piece of cheesecloth. Combine sugar, vinegar and bag of spices in a saucepan and bring to boiling. Cook rapidly for about 5 minutes, then remove spices. Add the lemon slices and boil another 2 minutes. Add pimentos; boil 1 minute. Pack in hot sterilized jars and seal. Makes 2 half pints. |
