CHILI CON CARNE (FOR A CROWD) 
This is a mild chili which is liked by everyone. Excellent on hot dogs.

4 lb. lean ground beef
4 cups chopped onion
2 (15 oz. ea.) cans tomato sauce
4 (1 lb. ea.) cans kidney beans, drained
2 (1 lb. 13 oz. ea.) cans crushed tomatoes
1 tbsp. salt
2 cups chopped green peppers
1/2 tsp. paprika
2 level tbsp. chili powder
3 bay leaves
2 tbsp. sugar

Season ground meat with salt. Brown in a 10-quart kettle. Add onions and green peppers and cook until tender, but not brown. Add remaining ingredients. Cover and simmer for 2 hours, stirring occasionally. Add water as needed for consistency.

Makes about 25 cups.
