ATHENIAN SALAD 
1 pkg. (about 2 stalks) Romaine lettuce
1 cucumber
2 tomatoes
1 med. green pepper
1 med. red onion
1/2 c. (or more) sliced pitted ripe olives
5 tbsp. olive oil
2 tbsp. red wine vinegar
1/2 tsp. oregano
1/2 tsp. basil
Feta cheese (about 1/2 a med. sized pkg.)

Wash lettuce and pat dry; tear into bite size pieces and place in salad bowl. Pare cucumber or score with fork; slice thin. Cut tomatoes into quarters or eighths. Cut pepper in small strips. Slice olives into halves, lengthwise.

Add vegetables to lettuce in bowl. Mix together oil, vinegar and spices and pour over salad. Toss to mix. Sprinkle crumbled Feta cheese over top.

Serves 6 to 8.
