CRISPY OVEN "FRIED" CHICKEN 
No-stick cooking spray
1 1/2 c. corn flakes cereal, crushed to 2/3 c.
1 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. oregano leaves
1/4 tsp. cayenne pepper
1 egg white
2 1/2 to 3 lb. frying chicken, skinned, quartered

Heat oven to 400 degrees. Spray broiler pan with cooking spray. In paper or plastic bag, combine cereal, paprika, garlic powder, oregano and cayenne. Place egg white in shallow bowl; beat slightly. Dip chicken pieces in egg white. Shake dipped chicken, 1 or 2 pieces at a time, in cereal mixture to coat. Place on sprayed broiler pan. Bake at 400 degrees for 45 minutes or until fork tender and juices run clear. 4 servings.
