CUCUMBER AND ONION SALAD 
3 med. cucumbers, peeled, leaving some green skin
1 tbsp. salt
1 sm. red onion, quartered and thinly sliced

DRESSING:

1/3 c. sour cream
2 tbsp. sugar
3 tbsp. white vinegar

Thinly slice cucumbers; add salt. Toss and place in refrigerator for 1 hour. Rinse well and drain cucumbers. Add onion. Blend sour cream, sugar and vinegar until smooth. Pour dressing over all. Toss and chill 4 hours. Serve cold. Serves 8.
