CREOLE CABBAGE 
1 chopped onion
2-4 tbsp. bacon drippings
1 can tomatoes
3 whole cloves
1/2 bay leaf
3/4 tsp. salt
1 head cabbage
3-4 green onions, finely chopped
2 tbsp. brown sugar
grated cheese

Use a big skillet, sauté yellow onions in bacon drippings, cooking until limp but not brown. Add all other ingredients, except cabbage and cheese. Simmer about 25 minutes or until tomatoes are well cooked. Remove outer layers of cabbage, cut into serving size wedges, removing core. Boil 10 minutes in salted water. Drain and remove cloves and bay leaf from sauce. Put cabbage in a serving dish and pour sauce over the top with grated cheese.

Bake at 400°F until cheese is melted. Serve steaming hot and pass the tabasco sauce.
