POTATO AND CABBAGE CASSEROLE 
1/4 c. butter
1 sm. cabbage, chopped coarsely
2 lg. onions, sliced
4 potatoes, boiled and sliced
1/4 c. flour
2 tbsp. butter
2 c. American or Cheddar cheese
1 (13 oz.) can chicken broth

In large pan, heat 1/4 cup butter and saute cabbage and onion until wilted. Place 1/2 of the cabbage, onion, and potatoes in 3 quart casserole. Sprinkle with 1 cup shredded cheese. Put remaining cabbage, onions, and potatoes on top. Melt 2 tablespoons of butter. Add 1/4 cup flour. Cook 1 minute and add can of broth. Cook until thickened. Pour over top of cabbage. Sprinkle 1 cup of cheese on top. Bake at 350 degrees for 45 minutes.

Wow! My husband went wild over this and has already asked me to make it again. To reduce the cholesterol just a little I substituted olive oil to saute the onions and cabbage and used a bit less cheese, but still used butter for the roux. The result was wonderful and even better the 2nd day! This is terrific comfort food. Next time I'm going to add some sliced low-fat Kielbasa for a complete meal in one dish.
