ZUCCHINI PIE 
4 c. diced zucchini
1 c. diced onion
2 c. shredded cheese (Swiss or cheddar)
2 eggs
1/2 stick butter
1 uncooked pie shell (8 inch crust)
2 tsp. mustard
2 tbsp. parsley flakes
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
1/4 tsp. basil
1/4 tsp. oregano

Saute zucchini and onions in 1/2 stick of butter for 10 minutes. Mix in rest of ingredients. Spread 2 teaspoons mustard on raw pie shell. Fill with ingredients. Bake at 350 degrees for 18 to 20 minutes. (Center should be set.) Let stand for 10 minutes.
