ZUCCHINI VEGETABLE HOTDISH 
1/4 c. diced onion
6 c. diced zucchini
1 pkg. chicken Stove Top stuffing
1/4 c. butter
1 can cream of chicken soup
1 c. shredded carrots
1 c. sour cream

Prepare dressing with 1/4 cup butter. Spread 1/3 on bottom of casserole dish. Saute onion and zucchini in butter until tender. Put this on top of the dressing and top with remaining dressing. Add the soup, carrots, and sour cream in layer. Bake for 1 hour at 350 degrees.
