ZUCCHINI VEGETABLE MEDLEY | |
2 c. mushrooms 3 c. zucchini 2 green peppers 1 c. sliced onion 1 clove garlic, minced 1/2 tsp. basil leaves, crushed 2 tbsp. oil 1 can golden mushroom soup 1 fresh tomato, cut up 1 tsp. salt Brown mushrooms in oil. Add zucchini, green pepper, onions, garlic, basil and tomato and cook for 5 minutes. Add salt and soup. Cook over low heat, covered for 15 minutes. Stir occasionally to prevent sticking. Remove cover and cook 5 minutes longer. Serve with Parmesan cheese. Serves 6. |
