GOURMET VEGETABLE SOUP 
1 1/2 qt. water
3 carrots, peeled & sliced
1 sm. onion, chopped & minced
3 chicken bouillon cubes
3 potatoes, peeled & chopped
2 tbsp. parsley flakes
1 (20 oz.) bag frozen mixed vegetables
2 cans cream of chicken soup
1 lb. Velveeta cheese
Pepper to taste

Cook first 6 ingredients in Dutch oven until tender. Add frozen mixed vegetables and cook until tender. Turn off heat and add cream of chicken soup and cheese. Stir often until melted. Reheat and serve. Serve with popcorn. Ideal to serve hungry guests. A very favorite winter supper.
