CREAMED CHIPPED BEEF OVER
POTATOES
 
1 pkg. dried beef
2 tbsp. minced onion
1/4 c. flour
3/4 c. whipping cream
1/4 tsp. ground ginger
Baking potatoes
3/4 c. boiling water
1/4 c. butter
1 c. hot chicken broth
1/2 tsp. mustard
2 tbsp. sherry

Put beef in boiling water. Let stand for 5 minutes. Drain and chop.

Saute onions in butter about 5 minutes. Stir in flour, cook stirring until thick. Reduce heat. Stir in beef, cream, mustard, ginger. Cook until smooth over low heat. Stir in sherry.
