CHIPPED BEEF TOPPING FOR BAKED
POTATOES
 
1/2 c. onion, chopped
1 stick butter
1/2 c. all-purpose flour
3/4 tsp. salt
1/4 tsp. black pepper
3 c. milk
1 c. sour cream
1/2 lb. dried chipped beef (Budd's is good)
1/2 c. cooking sherry
1/2 c. chopped fresh parsley (optional)
1 beef bouillon cube

Saute' onion in butter until tender but not brown. Add bouillon cube and crush with back of spoon. Blend in flour, salt and pepper. Add milk and cook, stirring constantly until mixture thickens. Stir in sour cream; add chipped beef, cooking sherry and parsley. Heat thoroughly and serve over a medium baked potato. Top with sprinkle of paprika for color. Serves 8. (If mixture is too thick, add more milk).
