SPICY RED BEANS AND RICE | |
1 1/2 to 2 lbs. smoked sausage, sliced in 1/2-inch slices 1 (1 lb.) bag red beans 1 lg. onion, chopped 1 lb. can tomatoes 2 cloves garlic, shopped 1 tsp. crushed red pepper 2 tsp. chili powder 2 tsp. salt 4 c. water Soak beans overnight. Combine in crock pot onion, tomatoes, garlic, crushed pepper, chili powder, salt and water. Add beans, which have been drained, and sausage. Cook on high for 2 hours and then on low for 8 hours. Serve over steamed rice. |
