ENGLISH MUFFIN BREAD 
5 c. flour
2 pkgs. dry yeast
1 tbsp. sugar
2 tsp. salt
2 1/2 c. milk
1/4 tsp. baking soda
1 tbsp. warm water

Mix 3 cups flour, yeast, sugar, and salt. Heat milk until warm, about 2 minutes. Add to flour mixture. Beat until smooth. Stir in remaining flour. Cover - let rise in warm place, until doubled in size, 1 hour. Dissolve soda in warm water. Mix into batter. Divide into 2 loaves. Let rise until doubled, 45 minutes. Cook uncovered for 6 minutes in microwave on high. Cool 5 minutes. Remove from pan. Makes 2 loaves.

Since microwave ovens vary in power, you may need to adjust your cooking time.
