JALAPENO AND HAMBURGER CORNBREAD 
1 c. yellow cornmeal
2 eggs
3/4 tsp. salt
1 lb. can cream style corn
1 c. sweet milk
1/2 tsp. baking soda
2 tbsp. bacon drippings or oil

Combine cornmeal, milk, eggs, salt, soda, shortening and cream corn. Mix well and set aside.

1 lb. ground beef
2 jalapeno peppers (canned or fresh) (grated or chopped finely)
1 lg. onion (grated or minced)
1/2 lb. Velveeta cheese (grated)

Brown ground beef and drain. Grease heavy casserole dish or iron skillet. Sprinkle with dry cornmeal. Pour half of cornmeal batter into it. Sprinkle grated cheese over this batter in skillet. Next, sprinkle cooked ground beef over this. Then chopped onions and pepper evenly over the meat. Top with remaining cornmeal batter. Bake at 350 degrees F. for about 50 minutes.
