JALAPENO CORNBREAD 
1 c. yellow cornmeal
1/2 tsp. baking soda
1/2 tsp. sugar
1 med. onion, chopped
1/4 lbs. sharp Cheddar cheese, finely shredded
2 eggs, slightly beaten
1/2 c. all-purpose flour
1 tsp. salt
1 c. canned cream style corn
2 or more jalapeno peppers, seeded and chopped
1/2 c. olive or vegetable oil
1 c. buttermilk

Preheat oven to 450 degrees. Grease pan or use iron skillet. Mix meal, flour, salt, soda, and sugar together. Add corn, onions, jalapenos, and cheese. Mix oil, eggs, and milk together; then add to the other ingredients. Pour into heated greased skillet and bake for 30 minutes.
