ENGLISH MUFFIN BREAD 
5 c. flour
2 pkgs. yeast
1 tbsp. sugar
2 tsp. salt
2 1/2 c. milk
1/4 tsp. baking soda dissolved in 1 tbsp. warm water

Mix together 3 cups flour, yeast, sugar and salt. Heat milk to warm and add to flour mixture; beat until smooth. Stir in enough of remaining flour to make batter stiff. Cover, let rise until double in bulk. Stir down and blend in thoroughly the dissolved soda. Divide into 2 oiled pans, cover and let rise until double. Cook each loaf in microwave on high for 6 minutes and 30 seconds. Cool 5 minutes, loosen edges and remove from pans. Cool completely before slicing. Toast and enjoy!

Since microwave ovens vary in power, you may need to adjust your cooking time.
