ENGLISH MUFFIN BREAD 
5 c. flour, unsifted
1/2 c. dark seedless raisins
2 pkgs. active dry yeast
1 tbsp. sugar
2 tsp. salt
1 1/2 tsp. ground cinnamon
1/4 tsp. baking soda
2 c. milk
1/2 c. water
Cornmeal

In large bowl, combine 3 cups flour, raisins, undissolved yeast, sugar, salt, cinnamon and baking soda. Combine milk and water in a saucepan. Heat over low heat until liquids are very warm (120 degrees), gradually add to dry ingredients. Beat well. Stir in remaining flour. Stiff batter. Spoon into 2 loaf pans (greased and coated with cornmeal.) Cover, let rise for 45 minutes. Microwave each loaf on high for 6 minutes and 30 seconds (separately). Allow to rest 5 minutes before removing from dish. Slice and toast to serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
