FRUIT COCKTAIL CAKE | |
1 1/3 c. all-purpose flour 1 c. sugar 1 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. cinnamon 2 eggs 1 (No. 303) can fruit cocktail (2 c.) Sift together flour, sugar, baking soda, baking powder, salt and cinnamon. Beat eggs. Add fruit cocktail (juice and all). Add this to flour mixture and stir. Pour into 9x13-inch greased pan. Topping: 1 c. brown sugar 1 c. chopped nuts Combine topping and sprinkle over batter. Bake at 350°F for 40 minutes. Best served warm topped with whipped cream or ice cream. |
