SHRIMP SCAMPI | |
1/2 lb. butter 1 tbsp. parsley flakes 3/4 tsp. garlic powder 1 tsp. lemon juice 1/4 c. oil 1 1/2 tsp. Italian seasoning (basil-oregano) 3/4 tsp. salt 1 lb. lg. fresh shrimp Melt butter. Add oil, parsley flakes, basil, oregano, garlic powder, salt and lemon juice. Peel and devein shrimp, leaving tails attached. Split down the inside lengthwise center, being careful not to cut through the shrimp. Spread open to simulate butterflies. Place in a shallow baking dish, tail end up. Pour sauce over all. Bake in a preheated very hot oven (450 degrees) for 5 minutes, then place under broiler 5 minutes or until brown. Makes 6 servings. |
