1/4 c. honey 3 1/4 c. water 1 c. rolled oats 1 c. raisins 1/2 c. ground fortified flax (if flax isn't available, use 3 tbsp. vegetable oil) 2 1/2 c. glutton flour 1/2 tsp. salt 2 oz. cake yeast 2 1/2 c. whole wheat flour 1 tsp. malt 2 tbsp. pecan pieces 1 tbsp. potato flour 1 tsp. cinnamon Measure the honey, flax, oil, cake yeast, water, wheat flour, glutton flour, oats, potato flour, malt, and salt into large bowl of mixer equipped with dough hook. Mix for 12 minutes. Distribute raisins, cinnamon, and nuts evenly in dough; it should be slightly sticky. Let dough rise for 1 hour. Punch dough down and let rest 15 minutes. Knead, divide in half, and shape into 2 loaves. Place in lightly greased loaf pans and let rise until double in size. Bake in preheated 350 degree oven 30 to 40 minutes or until loaves sound hollow when thumped on the bottom. Finished loaf should be 4 inches high and 8 inches long and weight 1 1/2 pounds. Makes 2 loaves. |
