BEEBIE'S CHEESECAKE 
1 c. sugar plus 2 tbsp. sugar
3 (8 oz.) pkgs. cream cheese
5 eggs
1/4 tsp. salt
3/4 tsp. almond flavoring
1 1/2 c. sour cream
1/2 tsp. vanilla

Cream together cheese and 1 cup sugar. Add eggs, one at a time, beating well after each one. Stir in salt and almond flavoring (all ingredients do best at room temperature). Bake at 325 degrees for 45 minutes in a springform pan. Take out and cool for 20 minutes. Mix remaining sugar, sour cream and vanilla together and pour on top.

Bake at 425 degrees for 10-15 minutes longer. Let cool. Refrigerate until cold. You may top with your choice of canned pie fillings right before serving (best to have it cold, too).
