ZUCCHINI JAM 
6 cups grated zucchini
1/2 cup fresh lemon juice
6 oz. pkg Jello, lemon, orange or coconut
6 cups sugar
1 cup crushed pineapple

Boil zucchini for 6 minutes. Drain. Stir in remaining ingredients. Boil for another 6 minutes. Remove from heat and add Jello.

Refrigerate overnight before using.

Variation: Try using other Jello flavors. Zucchini will take on any flavor.
