SUMMER VEGETABLE SOUP 
2 c. sliced okra
1 c. celery, diced
1/2 green pepper, chopped
1 sm. onion, diced
2 tbsp. butter
2 lg. tomatoes or 1 c. canned tomatoes
1 tsp. brown sugar
4 c. meat stock

Saute okra, celery, green pepper and onion in melted butter. Stir in remaining ingredients. Simmer at least an hour or until flavors are well blended. Rice may be added during the last 20 minutes of cooking time if desired. Cubes of cooked meat may also be added for a hearty mixture. Soup may be cooled and frozen for winter use.
