CHICKEN PARMESAN 
1/3 c. Parmesan cheese
3 skinned chicken breast
1 tsp. butter
1/2 c. skim milk
1 tbsp. pimento, chopped
1/4 tsp. Italian seasoning, crushed
1/4 c. all-purpose flour
5 oz. frozen spinach

In a small bowl combine cheese and Italian seasoning. Roll chicken pieces in Parmesan cheese mixture to coat, lightly. Set remaining cheese mixture aside. Arrange pieces in a 8 x 8 inch baking dish.

In a small saucepan cook onion in hot butter until tender. Stir in flour; add milk all at once. Cook and stir until bubbly; stir in drained spinach and pimento. Spoon spinach mixture over chicken; sprinkle with remaining cheese mixture. Bake at 350 degrees for 30-35 minutes or until tender.
